Our family is not big into pasta, so when I do prepare it, I make sure to include ingredients to which we’re partial–in this case, chicken, bacon, and lemon. Though Junior Too was a bit iffy about this particular recipe, Senior and I thought it was wonderful. So, though we didn’t reach a consensus, the majority of our thumbs are up. Enjoy!

Lemon Chicken Bacon Carbonara

16 oz thin spaghetti

6 slices bacon, chopped

2 cups chopped deli-roasted chicken

2/3 cup white cooking wine

zest of half a lemon

3 eggs

1 cup fresh grated Parmesan cheese

1/4 tsp ground black pepper

1 tbsp chopped parsley

1) Prepare pasta al dente according to package directions

2) Meanwhile, to large skillet over medium-high heat, add bacon and, stirring often, cook 5-6 minutes until crisp; add chicken and, stirring often, cook 2 minutes to warm through

3) Stir in cooking wine and lemon zest and cook 2 minutes; reduce heat to simmer and cover skillet with lid

4) Break eggs into medium-sized mixing bowl and whisk; stir in Parmesan cheese and pepper; set aside

5) Drain pasta (not completely–a bit of water ensures this is one moist carbonara); add pasta and egg mixture to chicken-bacon sauce in large skillet and toss well to coat; remove skillet from heat, sprinkle parsley over carbonara, and serve
