I enjoy working with my amazing cover designer to bring my characters to life beyond the printed word. Though I usually reserve that journey for my newsletters, this last one was so spectacular that I have to share it here.

PART II: Finding The Perfect Lady Elianor Of Emberly ~ No, not as enticing as yesterday’s installment of bare-chested-Scotsman-in-a-kilt, but nice. Once more, I pored over candidates to find this Scandinavian beauty with a bit of the huntress about her. Not quite Lady Elianor, but we can work with that, and the outstretched hand is perfect—well, once we get that poor thing out of it. Let’s just imagine it’s a catch-and-release thing. As for garb, she’s going to need a medieval gown to firmly place her in 14th century England. A rather lovely stop on the journey, hmm? Tomorrow, PART III: Hero Meet Heroine, Heroine Meet Hero

PART I: Finding The Perfect Baron Boursier ~ After poring over hundreds of candidates, here he is—yes, in a kilt, and no, the setting is not Scotland. The kilt and tattoo both have to go, 14th century armor being the order of the day. Oh, and give that man an eye patch! A rather handsome starting point, hmm? SLOW-COOKER CREAM-CHEESE CHICKEN CHILI

My guys went bowling and all I got was…slow-cooker chili that should have fed four. They got bowling alley food. Yeah, I fared well–would have even if the chili hadn’t turned out so good. And now I have leftovers that I may just keep to myself. So, only one thumbs up on this recipe, but it belongs to a professional…um, eater 🙂

1 lb chicken tenderloins, chopped

1 can Rotel tomatoes (mild diced tomatoes and green chiles)

1-1/2 cups corn (I used frozen)

1 cup chopped red bell pepper

1 can black beans, drained and rinsed

1 can pinto beans, drained and rinsed

1-1/4 cup onion, diced

1/2 cup reduced-fat Ranch dressing

1 tsp cumin

1-1/2 tsp chili powder

1 tsp sea salt

1-8 oz pkg reduced-fat cream cheese

Optional: shredded Monterey Jack cheese and parsley for topping

1) Set slow cooker to low heat; add  ingredients in order listed (except cream cheese); stir to combine; top with cream cheese

2) Cook 6-8 hours, stirring a few times to incorporate cream cheese; serve with optional cheese and parsley if you like

AVOCADO EGG SALAD SANDWICH

I should have used my favorite sourdough bread from Panera, but I didn’t want to make an extra trip, so I went with grocery-store-bought sourdough bread. Not that the sandwich wasn’t wonderfully tasty, it just could have been that times two–or three. Have you tried Panera’s sourdough?

5 eggs hard-boiled, cooled, and chopped

2 tbsp reduced-fat mayonnaise

2 tsp dijon mustard

1/4 tsp sea salt

1/8 tsp ground black pepper

8 slices sourdough bread (highly recommend Panera’s)

4 slices Monterey Jack cheese

8 slices turkey bacon, fried to slightly crispy

2 avocados, sliced thin

1) In medium bowl, gently combine eggs, mayonnaise, mustard, salt, and pepper; refrigerate 15-30 minutes before using

2) Assemble four sandwiches as follows, dividing ingredients between each: sourdough bread slice, cheese, bacon, avocado, egg salad, sourdough bread slice; serve!

Makes: 4 sandwiches
